Yam Pudding with Coconut Cream

Ingredients
  

  • 1 Coconuts - dry
  • 3 big Yams
  • Salt - to taste

Equipment

  • 1 scraper
  • 1 strainer
  • 2 knives - big & small
  • 1 bowl/basin
  • spoons
  • banana leaves for oven
  • oven & firewood

Procedure
 

  1. Peel yam tubers and wash thoroughly.
  2. Grate yam into a bowl.
  3. Scrap coconut and squeeze for milk into a bowl.
  4. Pour coconut cream into the bowl of grated yam and mix well.
  5. Add salt, to taste.
  6. Prepare oven/motu and light it.
  7. Once motu is fully hot and ready for oven.
  8. Spread the ingredient onto banana leaves.
  9. Wrap the banana leaves and bake in a stone oven or motu for about 2-3 hours depending on the heat.
  10. Serve hot for 5 people.
